Gun’s & Butter by Zero Chen

This recipe was first featured in our round-up on Cheese Tea cocktails.

45ml London dry gin
30ml Orange mate tea
20ml Lemon juice
15ml Simple syrup
House made parmesan foam*

Shake all the liquid ingredients and serve in a tumbler glass. Top with house made parmesan foam and garnish with a dehydrated orange slice and coconut chips.

*Parmesan foam (for nine drinks): Dissolve 3g of salt with 110g of milk, then add 100g parmesan foam powder and 80g of whipping cream and whip until foamy.
