The cocktail that won the 2005 Sherries of Spain Cocktail Contest, this really uses the delicate dry flavours in manzanilla sherry to pair exceptionally well with tequila. It’s quite a unique flavour, and one well suited to food.
35ml Reposado tequila
35ml Manzanilla sherry
20ml Premium pear liqueur (drier the better – not too sweet)
Stir and strain into a chilled cocktail glass or copita and garnish with a lemon twist.
