Lighter in alcohol, but still very full of flavour, this is a modern classic from the famous Dutch speakeasy Door 74, where it is hugely popular during winter. There are many versions of the PX Flip from around the world, though, including Samuel Joel Ross’s version incorporating pedro ximénez, cognac and a whole egg, served with a raisin garnish. But the recipe below is Door 74’s.

60ml Pedro ximénez sherry
20ml Lemon juice
5-10ml Rich sugar syrup (eg demerara sugar)
1 Egg yolk
4 Cloves

Muddle cloves in the bottom of a shaker, then add the other ingredients and shake very hard with ice. Strain into a chilled glass and garnish with grated cinnamon.
