This was a cocktail created to pair with a meal, so it shouldn’t be too overpowering or too alcoholic. It was also designed to be a palate cleanser, so the fresh sherry and bitter amaro do a great job of preparing you for a new dish – or a new drink for that matter.

60ml Manzanilla sherry
20ml Averna

Stir the ingredients over ice, strain into a cocktail glass or copita and garnish with an orange twist.
