A Manhattan with an umami saltiness and mouthfeel, inspired by the night markets of Southeast Asia – mouthwatering and midnight-black, it’s a simple twist on a classic, but one that really accentuates the flavours as squid ink is high in glutamic acid.
25ml Bourbon
25ml Rye
25ml Sweet vermouth
5ml Maraschino
8-10 drops squid ink mix*
2ds Angostura bitters
Stir over ice and strain into a cocktail glass. Garnish with a dried orange slice covered with freshly ground black pepper.
*Squid ink mix: 10ml sachet squid ink; 10ml water; 10ml vodka. Combine ingredients. Use within a few days.
