Use this alcohol-free bitter aperitif in your low or no abv Negroni, Spritz, Americano and more.

Makes one litre of aperitif.

288ml Fabbri Bitter syrup
288ml Monin Bitter syrup
125ml Citric tea*
150ml Wormwood tea**
150ml Fruit tea***

Mix all ingredients together, stir well.

*Citric tea: 5 whole orange peels; 5 whole grapefruit peels; 1l boiling water. Add orange and grapefruit peels to boiling water, stir well. Remove from heat and let sit for one hour. Fine strain and allow to cool completely.

**Wormwood tea: 7g Wormwood chippings; 1l Boiling water. Add wormwood chippings to boiling water, stir well. Remove from heat and let sit for one hour. Fine strain and allow to cool completely.

***Fruit tea: 2 tea bags Chamomile tea; 2 Tea bags vanilla black tea; 4 Satchels bouquet garni**** (use muslin cloth to make tea bag-sized satchels); 6g Mixed spice blend***** in a muslin cloth bag; 1l Boiling water. Add all ingredients to boiling water, stir well. Remove from heat and let sit for one hour. Fine strain and allow to cool completely.

****Bouquet garni: Fresh rosemary; Fresh thyme; Fresh sage; Fresh bay leaves. Put equal parts of all fresh herbs into muslin cloth bags.

*****Mixed spice blend: 1tbs Ground allspice; 1tbs Ground cinnamon; 1tbs Ground nutmeg; 2tsp Ground mace; 1tsp Ground cloves; 1tsp Ground coriander; 1tsp Ground ginger. Blend all spices together; store in an airtight glass jar.
