The magic of this cocktail is the rich velvet texture provided by the egg white and dairy ingredient, balanced by the trace of citrus. Don’t go overboard with the orange, and don’t substitute with orange liqueur. It should just be a dash of flavour.

45ml Gin
15ml Fresh lemon juice
15ml Fresh lime juice
30ml Simple syrup
60ml Milk (or cream if preferred)
1 Small egg white
2-3 Drops of orange flower water
Soda

Shake all ingredients except the soda hard over ice. Try shaking without ice to start, so that the egg white emulsifies and the drink becomes very frothy. (You can even use a hand mixer at this stage.) Then add ice and shake again. Strain into a chilled highball without ice. Top with a little club and stir. No garnish.
