By Allen Cheng, Fourplay Taipei, to benefit Salca.

“Taiwan has great natural resources, with lots of high mountains and big forests, and this cocktail will remind you of those. Considering that Taiwanese are not so fond of bitter tastes, I mix some curacao with the Campari to soften the bitterness. It’s a Negroni full of woody aromas to reflect the forest – you can pick up cedar, hinoki and camphor from the nose to the palate.”

45ml Ophir Oriental Spiced Gin
20ml Campari
20ml Cinzano 1757 Rosso vermouth
10ml Fernet Branca
5ml Curacao
2ds Suze orange bitters
2ds Bitter Truth Drops & Dashes Wood

Stir and serve over ice in a rocks glass, garnish with dried orange slice and cedar wood pieces on the side.
