Who’s on shift: Guest bartenders in Asia this January

Macarena Rotger and Rishi Randhawa (The Other Roof and The Other Room, Singapore) at Indulge Experimental Bistro (Taipei)
The team from Singapore’s well established The Other Room – which clocked in at 93 on the World’s 50 Best Bars 51-100 list – and the brand new tea haven The Other Roof will head to Taipei for one night at Aki Wang’s decorated Indulge Experimental Bistro.
When: January 8, 8-11pm.

Jason Williams and Joe Alessandroni (Proof & Company) at Dew Lounge (Shenzhen)
Two Proof team members – creative director Jason Williams and spirits evangelist Joe Alessandroni – will pair up for a shift featuring drinks from the group’s own 28 HongKong Street in Singapore. They’ll be whipping out 28HKS cocktails such as Lazy Bear (Peddlers gin, Mancino Bianco vermouth, Mathilde Peche, Chartreuse VEP Verte) and Dillmatic (Peddlers gin, Mancino Secco vermouth, lemon juice, simple syrup, fresh dill, snap peas). Earlier in the day, catch Williams in his masterclass on how to build a world class bar.

Supawit ‘Palm’ Muttarattana and Kenny Thianthong (Vesper, Bangkok) at Gibson (Singapore)
The Bangkok boys head to Singapore to celebrate the art of Southeast Asian ingredients. Coinciding with their launch of the new menu “Finale”, the Vesper team will be shaking up cocktails using The Botanist gin over two evenings.
When: January 11 and 12, 6pm-2am

Jon Lee (Tippling Club, Singapore) at Moon Bar (Banyan Tree, Bangkok)
Tippling Club’s newest menu Perfume – The Story of a Cocktail, is heading to Bangkok’s award-winning rooftop Moon Bar at Banyan Tree Bangkok. The menu is an innovate sensorial experience, with cocktails based on fragrances and Jon Lee serving them in Bangkok for one night only.
When: January 19, 8pm-midnight.

Shawn Chong, co-owner of Kuala Lumpur’s stellar Omakase + Appreciate heads up north to guest shift for Casa Poncho’s one year anniversary.

Remy Cointrau Taiwan’s brand ambassador Mark Huang will be heading over to Singapore for two guest shifts at Eliza Lounge and Mona Lounge.

Ilias Stergiopoulos and Phaedon Papakonstantinou (Baba Au Rum, Athens) at Havana Social (Bangkok)
Baba Au Rum, one of the World’s Best Bars in Athens, heads to Bangkok for the first time to take over Havana Social. Ilias and Phaedon will be serving signature drinks at the hidden pre-revolutionary 1940’s Cuban cocktail bar.

Wilson Pires (formerly of Tales & Spirits, Amsterdam) at Vida Rica (Macau)
Wilson Pires’ three-night residency at Vida Rica has been titled “The Art of Being Portuguese”, with the Portuguese native bringing his stylings to the former Portuguese colony of Macau. Pires recently departed Amsterdam’s Tales & Spirits, which sits at number 31 on the World’s 50 Best Bars 2017, and is known for his use of creative vessels and serves.

Seven Yi (ROOM by Le Kief, Taipei) at Tiffany’s New York Bar (Hong Kong)
Seven Yi, owner of Taipei’s ROOM by Le Kief in Taiwan, heads to Hong Kong to serve his signature cocktails that blend his expertise in the kitchen and bar. His innovative cocktails combine food and drinks by distilling liquid from ingredients such as toasted bread, tomato and grass. He’ll be serving three signature cocktails and a special limited edition cocktail.

Alexander Shtifanov (Russia) at Moon Bar (Banyan Tree Bangkok)
Alexander Shtifanov – three time World Champion in Flair Bartending – will be showcasing his talent and flipping some Bacardi bottles at Bangkok’s award winning rooftop Moon Bar at Banyan Tree Bangkok.
When: January 26, 9pm-midnight.

Vijay Mudaliar (Native, Singapore) at Bar Trigona (Kuala Lumpur)
Vijay Mudaliar will be visiting a Malaysian toddy farm in Banting with Bar Trigona’s head bartender Ashish Sharma to experience the toddy making process the day before delivering a masterclass and guestshift, where he’ll serve cocktails will featured locally sourced toddy.

Royce Pua (Prima Facie Manilla) at Whisky & Words (Hong Kong)
2017 Diageo World Class Philippines champion and trade ambassador for WGS Philippines Royce Pua will be guesting at Hong Kong’s newest whisky den, serving cocktails such as Magic Mushroom with Monkey Shoulder, shitake syrup and shimeji mushroom; Spey Bae with Glenfiddich 12, St. Germain, grapefruit and Angostura bitters and Apple Cream Pie – Monkey Shoulder, reduced apple syrup, Angostura bitters, apple soda and vanilla ice cream

Julian Youssef (Central Station, Beirut) at Tippling Club (Singapore)
This first edition of Tippling Club’s “Once Upon A Time” themed guest shifts for 2019 gets Lebanese with Central Station’s head bartender Julian Youssef heading to Singapore. Central Station took the 27th spot on the World’s 50 Best Bars this year, and Youssef will be shaking up five Grey Goose based cocktails, with Lebanese dishes courtesy of the Tippling Club kitchen.
