Tonic water plays nice with mezcal in this creation by the American Bar at The Savoy’s former head bartender.

25ml Mezcal
30ml Lime juice
15ml Hibiscus agave
6 to 8 Coriander leaves
The London Essence Company’s Grapefruit and Rosemary Tonic

Shake the first four ingredients hard, double strain over ice-filled rocks glass, then top with tonic water. Garnish with a dusting of paprika on the rim of the glass.
