Recipe: Absinthe Suissesse

This recipe was featured as part of our story on Absinthe.

50ml Absinthe
15ml White crème de menthe
30ml Cream
10ml Orgeat
1 Egg white

Dry shake, then shake over ice and strain into a wine glass. The cocktail should have a gentle frothiness. Crème de menthe can be a touch divisive. Many prefer to omit the minty liqueur and increase the orgeat to compensate. Should you go this route then consider adding a small dash of orange flower water.
