50ml Paper Lantern gin
10ml Betel leaf-infused bianco vermouth*
3ds Grapefruit bitters

Stir down grapefruit bitters, betel leaf vermouth and gin in a glass. Serve with cubes of mango and saucers of calcium paste, pan masala and fennel seeds.

*Betel leaf-infused bianco vermouth: Combine 50g of shredded betel leaves with Mancino Bianco in a vacuum bag. Steep in a 50C bath for 2 hours, then refrigerate for flavours to set.
